Gluten Free Breakfast Cookies
Yup, that’s right. I said breakfast cookies. These are amazing little cookies. There is no sugar and they are super high in protein and fiber AND are gluten free.
I got this idea from one of my favorite blogs http://sallysbakingaddiction.com she does an amazing job with cookies and she helped me master my chocolate chip cookies. Here is a link to her original recipe but I altered it a little because that’s just what I do. I have a hard time following directions 😉 Banana Chocolate Chip Breakfast Cookies
So here is my recipe
2 ripe bananas
2 1/3c. whole oats (I wanted less processed)
1c. almond butter (I get this fresh ground at Rosauers, YUM!)
1 tsp. cinnamon
1/4c. macadamia nuts
1/4c. pistachios chopped
3/4 tsp. salt
Preheat your oven to 350 degrees.
Dump all of your ingredients into a blender and just mix until well combined. Super simple and easy. I use a large cookie scoop to make piles on my cookie sheet then lightly flatten them with a spatula because they will not raise or change shape.
Bake for 15 minutes (no longer). Let cool and store in air tight container. The best thing for kids in the morning because it gives them excellent protein and it’s easy to run for the bus with it in your hand 😉
What I love about these cookies is they are not dry. They keep moist and hold their shape great.
