Gluten and Dairy Free Alfredo Sauce
One of my favorite things that I miss being gluten and dairy free is alfredo sauce. Who doesn’t love that comfort food of starchy noodles with a delicious creamy sauce just like macaroni and cheese.
It was my mission to find out how to recreate this yummy dish so I can enjoy it again.
Here is my revelation with this yummy recipe without the awful butter, milk, and gluten hangover.
This recipe is so versatile as well. You can use it for many things. Just your typical chicken alfredo, alfredo pizza, etc. You can even use this as a cheese sauce for veggies.
I like to put veggies with my chicken alfredo as you can see in this picture.
Here are the goods!
- ½ C. Earth Balance Butter
- 1 TBSP. Minced Garlic
- 1 TBSP. Potato Starch
- 1½ C. Chicken Broth
- ½ C. Goats Milk (any other milk substitute should be fine)
- 1 tsp. Onion Powder
- ¼ tsp. nutmeg
- Salt and Pepper to taste
- Melt the butter with the minced garlic. Saute until garlic is golden. With a whisk add in your potato starch to make a rue. Add in your chicken broth (your mixture will clump and you might panic) keep stirring and whisking well till all the lumps dissolve. Add in your milk of choice (the creamier the milk the better). Add your seasoning and salt and pepper to taste. If you would like it thicker or thinner just add more chicken broth or milk or make a thickener with a little potato starch and water. Enjoy!
