Gluten free fluffy banana bread

This is the most amazing gluten free baked good that I have ever made and it doesn’t even taste like it’s gluten free.  I thought I would share my great creation with you.

Mix oil, brown sugar, eggs, and vanilla together.  In another bowl sift together all flours, baking soda, baking powder, and xanthan gum, salt, cinnamon, and nutmeg.

Mix the banana’s in with the wet ingredients.  If you want to add zucchini at this point you can (about 1/2 cup).  Mix in dry ingredients.  Do not over mix this because your bread will get tough.  If you want to add chocolate chips or nuts at this point just hand mix them into the batter.

Bake at 350 degrees for 50-60 minutes.

As you can see this bread can be customized with many additions that just make this bread even yummier.  I usually add macadamia nuts, zucchini, and mini chocolate chips to mine.  You could also add things like dried fruit or other nut choices.  Hope you enjoy!

If you would prefer to save time and use 1 3/4 cup Better Batter Gluten Free All Purpose Mix instead of the individual flours feel free.

It is the best served warm with butter .

Ingredients
  • ¼c. olive oil
  • ⅔c. brown sugar
  • 2 eggs
  • 1tsp. vanilla
  • ½c. brown rice flour
  • ½c. tapioca flour
  • ½c. potato starch flour
  • ¼c. coconut flour or almond flour
  • 1½ tsp. xanthan gum
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • ½tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. nutmeg
  • 3 ripe bananas
Instructions
