I came across this idea when I was craving fajita’s but my kids hate fajita’s. I started thinking, “how can I twist this so they would eat it?” They love quesadillas so why not mesh the two? Grilled fajitas, genius.
So I started with my fajita ingredients.
I combined onion, yellow and red pepper, taco seasoning, and deer steak (of course you can use skirt steak, etc.) We use deer or antelope steak a lot since my husband goes hunting every fall. Anyhow, mix in a little olive oil to saute everything till your meat and veggies are cooked.
Now it’s time to assemble the quesadilla for grilling. I used large burrito style tortillas. I heat up the tortillas a little in the microwave so they fold easily. Put in a little fajita mixture and add cheddar cheese (pepper jack also works great). Make sure you put the cheese on the bottom and top inside the tortilla so it glues shut.
Fold the tortillas over and put them on the grill. I used two spatulas to flip these because they were so big.
Once your cheese is nice and melted they are done. I cut them in half to eat 🙂 They were so yummy. I topped them sort of like a tostada because I love all the extras when it comes to Mexican food. You can customize to your taste.
1 lb. beef steak
1/2 large onion
1/2 red pepper
1/2 yellow pepper
2 tbsp. taco seasoning
4-5 flour tortillas
1c. cheddar or pepper jack cheese
sour cream, salsa, lettuce, olives, cilantro, avocado (optional)
