Jambalaya

Ok, this probably doesn’t come close to real New Orleans Jambalaya but it’s close and it’s super easy and a quick dinner choice.

Cut up 2 boneless chicken breasts into bite size pieces.  Cook until about half done then add a box of Zataran’s Spanish Rice along with all the ingredients they tell you on the back of the box.

You can also get the jambalaya rice but I like this better and use it for many other things so I usually have it on hand.

Next, slice up some Kielbasa sausage (this can be whatever you like to use).  I always get the Hillshire Farm brand.

You can also add whole shrimp but this is optional.

Once everyone is in the pot then put the lid on and follow the directions for cooking the rice.

Serve with your favorite vegetable and a slice of crusty bread, YUM!
