This is the most amazing salad I have every made and it was so simple. It is amazingly healthy for you as well. Kale is an amazing source of Vitamin C and A. Kale also provide an excellent support for the bodies detoxifying system. Kale provides great antioxidants and anti-inflammatory benefits as well. Honey in this recipe is also great for your body as it is a natural antibacterial agent and to top it all off the lemon mixed in the dressing just adds to the many benefits this salad will provide.
If you need an extra protein punch for a lunch you could add in some grilled chicken to help sustain you for the rest of the day.
Kale and Strawberry Salad
3 leaves of kale (chopped into bite size pieces)
1/4c. chopped macadamia nuts (you can sub whatever nuts you like aka almonds)
1 avocado (cubed)
1 tbsp. honey
2 tbsp. lemon juice
2 tbsp. olive oil
salt and pepper to taste
You can make the dressing more sweet or more sour by just adjusting the honey or lemon juice. I found this to be a great balance between the two.
Whisk your dressing together and add to the kale, strawberries, and nuts. Cover and let sit in fridge for at least 15 minutes to let the acids soften the kale a little.
I put my avocado in right before serving so it didn’t go brown.
