As if the name of these isn’t already a mouth full just wait until you make these.  You will be shoveling them in one after another once you make them.

I adapted this off of a blog I found.  As most of you who follow my blog know I don’t like using baking mixes.  Mostly in part because it’s so much cheaper and readily available to just have your favorite few flours on hand at all times.  Some of those baking mixes out there are pretty steep in price.

Enough about me complaining about that.  Let get to the fun part.

Here is the “real” cookie monster.  This is my son who absolutely LOVES to make sugar cookies.  I think he just loves rolling them out and using the cookie cutters but he’s a good helper.

These cookies are amazing and you can NOT tell the difference.  They are a little time consuming but well worth it.  Another good tip is to have the dough rolled up in plastic wrap and you can freeze it until you need it then if you want round cookies just slice them while they are cold and it super easy instead of using cookie cutters.  This makes a HUGE batch so you could freeze half of it.

Gluten Free Breaded Catfish

This is a recipe that I adapted to be gluten free.  I did some experimenting and this came out better than I had ever imagined.

Ok, start with some yummy catfish (I got this stuff at Costco).  You can also use many other fillet’s such as Cod, Walleye, or Trout.  Just make sure you have most of the bones out 😉  My father in law catches like a MILLION fish, he doesn’t brag (he loves to fish to say the least) so I have an endless supply of fish when my Costco catfish runs out. Kale Strawberry Salad

This is the most amazing salad I have every made and it was so simple.  It is amazingly healthy for you as well.  Kale is an amazing source of Vitamin C and A.  Kale also provide an excellent support for the bodies detoxifying system.  Kale provides great antioxidants and anti-inflammatory benefits as well.  Honey in this recipe is also great for your body as it is a natural antibacterial agent and to top it all off the lemon mixed in the dressing just adds to the many benefits this salad will provide. Yup, that’s right.  I said breakfast cookies.  These are amazing little cookies.  There is no sugar and they are super high in protein and fiber AND are gluten free.

Spelt Berry Salad

I was craving this salad and something fresh and summery due to our never ending winter we seem to be having.  I wanted to mix things up a bit and so I thought what better way to use spelt berries than this salad.  I bought them on a little trip I took because I always wanted to try spelt berries.  I have used spelt flour in some gluten free baking experimenting I have done.  Now, some of you who do your research might say spelt is NOT gluten free.  This is true!  It has a moderate amount of wheat and it is a species of wheat.  It is a very good source of protein and fiber so it is a very good alternative to wheat, quinoa, or barley.

Fun fact: Spelt doesn’t require as many fertilizers to grow so it is growing popularity in the organic farming movement.

The BEST Rice Crispy Treats

These are the best rice crispy treats on the planet.  They are the moistest, softest, and yummiest treats I have ever made.  I have been making them all wrong for the longest time and now I have mastered the rice crispy treat.

8 Tbsp Butter (make sure you cut into 1/4″ slices)

1/2 tsp. vanilla

12 Cups Rice Crispy Cereal (any brand will do)

1 bag 12oz. Mini Marshmallows

So I use the microwave for these because I busy and I use my stove enough 😉

In a large bowl combine mini marshmallows, vanilla, and butter.  Melt in microwave for 1 minute at a time and stir in between until marshmallows are all dissolved.  Mix in rice crispy’s.  You can add in sprinkles if you want or any other fun stuff like M&M’s or Reese’s Pieces.  I made these for Valentine’s Day so I put Valentine sprinkles in mine and cut them out into hearts.

The cool thing about this recipe is that it’s so moist that you can actually pick up the remaining portions from cutting out your hearts and smoosh them back together and cut more out.  Or you can just eat the rest like I did 😉

I am craving these again now so I am off to make a batch.

Jambalaya

Ok, this probably doesn’t come close to real New Orleans Jambalaya but it’s close and it’s super easy and a quick dinner choice.

Cut up 2 boneless chicken breasts into bite size pieces.  Cook until about half done then add a box of Zataran’s Spanish Rice along with all the ingredients they tell you on the back of the box.
