Chinese Broccoli Beef Stir Fry
My family LOVES Chinese food and considering we now live in the middle of nowhere it’s a little hard to get. I have been determined to make the best Chinese food that I can and get as close to the recipes we get from take out.
This is a rendition of Broccoli Beef that you would get. In my opinion I think it is a little healthier than take out which is a plus 😉 My daughter recently told me my Chinese is better than take out (blushing a little).

Roasted Cabbage Rounds
The is an awesome side dish with any meal. Ever have half a head of cabbage around from the coleslaw you made? This is a great way to use it up and it’s super healthy for you. It takes only a few minutes to roast these as well which makes it even better as a side. Just slice the cabbage 1/4-1/2″ circles and put flat on a cookie sheet. I drizzle my roasted garlic olive oil on top and then some salt and pepper and the special ingredient (celery salt). Roast them in a 400 degree oven for about 10-12 minutes and enjoy.

Easy Eggs Benedict
I am an addict when it comes to eggs benedict. Every time we go out for breakfast I can’t help but order this open face slice of heaven. Granted I am a little critical when it comes to my order because very few places ever get this perfect. It’s either the eggs are over cooked or the sauce is anything but flavorful.

Savory Breakfast Scones
Back when I worked at Bozeman Deaconess Hospital every now and then I would treat myself to the most delicious scone that was ever made. I told myself that one day I would make these at home because they can’t be that hard, right?
It had some of my favorite things in it like cheese, green onion, and bacon.
That day had come when I was craving one of these delicious scones for breakfast today and I was determined to figure out the recipe. After much searching it was finally time to give it a go and see if I could get close to making these amazing scones.
I got some Tom and Jerry mix from the store around Thanksgiving time and realized I LOVED it and I had never had it before. Our local grocery store mixes this up and sells it around the holiday’s.
I found myself in a horrible situation. I ran out right before family and friends were coming over. YIKES! I realized on the container it only had a few ingredients on the label so I figured how hard could it be.
I did a lot of research online trying to see how people make there own versions and I really didn’t find a whole lot of help. So I decided to make my own version. It turned out amazing.
Here is what you need:
3 eggs seperated
1c. brown sugar
1 1/2c. powdered sugar
1/2 stick butter
1 tsp. cinnamon
1/2 tsp. ground clove
1/2 tsp. nutmeg
1 tsp. vanilla bean paste (you can use vanilla extract if needed)
So first of all separate your eggs whites and yolks. Beat the egg whites until soft peaks form, set aside. Beat your 1/2 stick of butter till smooth, add your egg yolks and beat again till well combined. Add in your sugars and beat until nice and fluffy (about 3 minutes). Now add your vanilla bean, clove, cinnamon, and nutmeg. After mixing in your spices beat in your egg whites till nice and creamy.
Here is the secret to making this drink even more amazing. Just add a shot (or two) and your done.
Assembly: fill your cup 1/2 full with boiling water, add 2 heaping tbsp of Tom and Jerry mix to your cup, add 2 shots of Rum Chata.
Now it’s time to sit back and enjoy your yummy afternoon delight in peace and quiet. Just kidding you have 2 kids and like that will ever happen. Maybe after bedtime 😉
You can store this in the refrigerator for about a week or you can freeze it for up to 6 months for a relaxing treat any time.
This is the simplest side dish I can think of and it is sooo incredibly delicious and healthy too.
I came across this idea during harvest this past season when my husband couldn’t have potatoes due to some medical treatment he was going through (don’t ask). Anyway, he absolutely LOVES french fries and he had gone about 4 months without eating them and I knew it was killing him so I had to come to the rescue.
Easy Crusty Sourdough Bread
So this has got to be the most life changing bread I have ever made, period. It is the simplest thing I have ever made and I could eat the entire loaf in 1 sitting. If anyone knows me they know I LOVE to bake but I have the worst time making bread. Not really sure why but I do. It kills me and every so often I have to give it another go but still it just doesn’t turn out.
