Gluten Free Spinach Artichoke Pasta

This pasta is so refreshing.  I make this a lot when I am missing the warmer weather and need a break from hearty comfort food.   This was also one of my first dishes I made after my clean eating plunge.  This dish is also gluten free with brown rice pasta.  I love Tinkyada brand gluten free noodles personally but there are many great ones.  Are you ready to start making this awesome pasta.  Here goes:

I started by baking some bacon.  Yes, you heard me “baking” your bacon.  It takes a few minutes longer but you don’t have to manage it on the stove or worry about what the microwave is doing to it.  So put it in the oven at 350 for around 10-12 minutes depending on how thick your bacon is.

With part of my clean eating I decided to just put the bacon in the hubbies pasta and the kids otherwise they won’t eat the veggies.  I know it’s so depressing.

So you can substitute things like chicken breast or shrimp too.

Moving on!

So cook your noodles till al dente.  While your noodles are cooking saute your garlic olive oil, lemon olive oil, balsamic vinegar, onion, 2 small anchovies, minced garlic, and capers.

Add in your spinach, cherry tomatoes, zucchini, and artichokes. Saute for a couple minutes till sauce is incorporated.  Add in your cooked noodles.

Once everyone is in the tub 😉 take your lemon and zest half of it over your pasta and then cut it in half and squeeze the juice over your pasta.  Saute for a few minutes until all the flavors are infused.

Lastly, cut up some fresh basil leaves and sprinkle them over your dish.

Ingredients
  • 1 chicken breast or 3 strips cooked bacon
  • 3 tbsp garlic infused olive oil
  • 2 tbsp lemon infused olive oil
  • 2 tbsp. balsamic vinegar
  • 2 small anchovies
  • 1 tbsp capers
  • 1 tbsp minced garlic
  • 2 cups gluten free pasta
  • 1 cup cherry tomatoes (about 10)
  • 1 small zucchini
  • 1 small jar quartered artichokes
  • 1 cup spinach leaves
  • 1 lemon
  • 3 leaves fresh basil
Instructions
