This is the simplest side dish I can think of and it is sooo incredibly delicious and healthy too.
I came across this idea during harvest this past season when my husband couldn’t have potatoes due to some medical treatment he was going through (don’t ask). Anyway, he absolutely LOVES french fries and he had gone about 4 months without eating them and I knew it was killing him so I had to come to the rescue.
We had tons of zucchini (as most people do in the part of the country). So I cut up a large zucchini from the garden into french fry slices. Make sure you peel most of the outer skin off unless you like it. Then I took a packet of ranch salad dressing (the dry mix, not real already made dressing). So I put that in a gallon zip lock bag with about 1/4c. tapioca flour ( you could use regular flour if your not celiac). I dumped in all my zucchini into the bag and shook it around to coat all the fries. Let it sit for about 10 minutes and the oil from the zucchini will make an almost beer batter on the zucchini.
Dump them into your deep fryer for about 5-8 minutes and your done. I served these with a sweet chili sauce but I think even better would be a siracha sauce (1/4c. siracha sauce, 1/4c. mayo). These are so good you can even eat them plane.
